I eat ice cream for breakfast
I’m a healthy strong boy
I eat ice cream for breakfast
And help dad at McCoy’s
I eat ice cream for breakfast
Surely, not the kind you would think
I eat ice cream for breakfast
My plate licked clean then tossed in the sink
My cone was a wedged wheat waffle
With a scrumptious scoopful of K
I say, this is starting to sound delightful
Then garnished with a brussel sprout
Definitely no way!
Instead I topped it with a berry
Next time I think I’ll try a cherry
The poem above is dedicated to some of
my best friends in the world, Betsy and Philip Espinal.
We had a farm fresh egg, raw milk, and fresh ground wheat for our whole wheat waffles.
Our waffle recipe:
3 cups whole wheat
1 tbsp baking powder
1 tsp baking soda
1 tsp Real Salt
2 cups buttermilk
4 farm fresh eggs
1/2 cup coconut oil
1/2 cup butter
